-½ teaspoon mace

-½ cup mint leaves
-½ cup coriander leaves

To make the masala:

In a pan, dry roast and grind together:

4 cloves, 4 cardamom, 1 bay leaf, 1 cinnamon stick, 1 teaspoon poppy seeds, 2 tablespoon coriander seeds and 1 teaspoon cumin seeds.

For the rice:

-2 cups basmati rice
-4 cups water
-2 tablespoon ghee or clarified butter


Wash and soak the rice in water for 30 minutes. Drain and set aside.

Heat ghee in a deep pan. Add the meat and fry till browned all over. Remove from the pan and set aside.

In the same pan, fry the onions till golden brown. Add the ginger garlic paste and fry for a few more minutes. Add the tomatoes and fry till they are soft.

Add the ground masala and all the dry spices except green chillies, mint leaves, coriander leaves and half of the fried onions. Fry for a few more minutes till the spices are fragrant. Add a little water if necessary to prevent burning.

Add the meat and half a cup of water. Simmer till the meat is cooked through (about 30 minutes). If necessary, add a little more water to prevent burning. At this point, you may remove any excess fat from the surface of the gravy using a spoon.

Wash and drain the rice. Add it to a deep saucepan with 4 cups of boiling water and 2 tablespoons of ghee or clarified butter. Cook till al dente (about 10 minutes). Drain and set aside covered to keep warm till needed later on.
