Introduction

Biryani (pronounced [bɪr.jaːniː]) is a mixed rice dish with its origins among the Muslims of India and Pakistan. It is popular throughout the subcontinent and among the diaspora from the region. It is sometimes made with lamb, chicken, beef or shrimp.

The history of beef biryani

Beef biryani is a rice and beef dish that is popular in many parts of the world, especially in South Asia. The dish is made by cooking beef and rice together in a spices and aromatic mixture.

The history of beef biryani is thought to date back to the Mughal era in India. It is believed that the dish was introduced to India by the Mughals, who were Central Asian Turkic people who ruled over large parts of the Indian subcontinent from the 16th to the 19th centuries. The Mughals were known for their love of rich and flavorful food, and beef biryani is thought to be a reflection of this.

The dish gained popularity in India during the Mughal era, and it has since become one of the country's most beloved dishes. Beef biryani is now popular in many other parts of the world, including Pakistan, Bangladesh, and Sri Lanka.

The ingredients of beef biryani

-1 kg beef
-1 onion
-1 tablespoon ginger-garlic paste
-3 tomatoes
-2 tablespoon Chilli powder
-2 teaspoon coriander powder
-1 teaspoon turmeric powder
-1bay leaf
-2 cloves
-2 cardamoms
-1 cinnamon stick
-½ teaspoon mace
-½ teaspoon nutmeg
-3 green chillies
-½ cup mint leaves
-½ cup coriander leaves

To make the masala:

In a pan, dry roast and grind together:

4 cloves, 4 cardamom, 1 bay leaf, 1 cinnamon stick, 1 teaspoon poppy seeds, 2 tablespoon coriander seeds and 1 teaspoon cumin seeds.

For the rice:

-2 cups basmati rice
-4 cups water
-2 tablespoon ghee or clarified butter

Method:

Wash and soak the rice in water for 30 minutes. Drain and set aside.

Heat ghee in a deep pan. Add the meat and fry till browned all over. Remove from the pan and set aside.

In the same pan, fry the onions till golden brown. Add the ginger garlic paste and fry for a few more minutes. Add the tomatoes and fry till they are soft.

Add the ground masala and all the dry spices except green chillies, mint leaves, coriander leaves and half of the fried onions. Fry for a few more minutes till the spices are fragrant. Add a little water if necessary to prevent burning.

Add the meat and half a cup of water. Simmer till the meat is cooked through (about 30 minutes). If necessary, add a little more water to prevent burning. At this point, you may remove any excess fat from the surface of the gravy using a spoon.

Wash and drain the rice. Add it to a deep saucepan with 4 cups of boiling water and 2 tablespoons of ghee or clarified butter. Cook till al dente (about 10 minutes). Drain and set aside covered to keep warm till needed later on.
